Summer is my least favorite time to cook, not because I don’t like to cook but no one wants to have the house heated with the oven or the stove being on and then even if I cook something that way the kids tell me its to hot to eat a casserole and end up eating nothing so we grill ALOT and pasta and potato salads of different varieties become staples along with fresh veggies either raw or sautéed.
In order to save myself time I make the pasta and potato salads ahead of time and then it saves me stress during the week. This is one of the pasta salads that is in our rotation and it has more of an adult flare to it then the normal pasta salad with mayo so it is a great one to bring to a party!
I also save the house from being heated to much by cooking my pasta and potatoes at night when the temperatures are down and putting the cooked pasta and potatoes in the fridge and then making the actual pasta salad the next day.
This Balsamic Roasted Red Pepper Pasta Salad is amazing, made with roasted red peppers, chickpeas, mozzarella cheese, olives and Balsamic Vinegar it is sure to be a hit at your house too! It is super easy to make but looks beautiful so it is also a great pasta salad to bring to parties and get togethers!
There are something you can change up in this recipe and make it your own flavors and tastes. This recipe is so easy to adjust and you are easily able to have fun with it 🙂

Balsamic Roasted Red Pepper Pasta Salad
Balsamic Roasted Red Pepper Pasta Salad Ingredients:
1 box cooked pasta- Rotini, Bowtie ect. which ever kind you have on hand will work
8 ounces fresh mozzarella cheese
1 can Chickpeas
1 lg. jar Roasted Red Bell Peppers (Sliced)
1 lg. Can Large Black Olives (Sliced)
2 Tbsp Olive Oil
1/4 cup Balsamic Vinegar
Salt and Pepper to taste

Cook pasta according to box and set aside and let cool. (I also rinse the pasta with cold water so it cools faster). Slice your red peppers, olives and add into pasta. Add in olive oil, balsamic vinegar and chickpeas and stir well. taste it and then add your salt and pepper to taste.
