A friend of mine has always raved about Chicken Doritos Taco Casserole and it always sounded amazing except for it using cream of chicken and cream of something else soup. I am sure it tastes great but I am not a fan of the cream of anything soups other then cream of mushroom and so I have skipped out on making anything like the Chicken Doritos Taco Casserole that she talks about all the time until I could have the time to mess around and figure out something that would taste amazing with out needing cream of any thing soup. Well I finally got to and made this Chicken Doritos Taco Casserole which everyone in the house loved and cleared their plates and I am excited to share it with you guys!
Easy Cheesy Chicken Doritos Taco Casserole
Chicken Doritos Taco Casserole Ingredients:
- 2 pounds boneless skinless chicken breasts
- can of corn (drained)
- 1 cup sour cream
- 3 cups crunched up Doritos (the ones in the red bag)
- 8 ounce bag shredded cheddar cheese
- 1/2 head of lettuce
- 1 large tomato diced
- 1 can of Pace tomatoes with chilis
- 1 teaspoon cumin
- 1 tablespoon chili pepper
- 1 teaspoon garlic powder
- 1/2 cup Pico de Gallo or Salsa
Chicken Doritos Taco Casserole Directions:
Preheat oven to 350 degrees.
Dice chicken into bite sized piece. In a large skillet add a small amount of oil (I used coconut oil), then add chicken, cumin, garlic powder and chili powder and cook until cooked all the way through.
In a bowl mix corn (drain water out of can first), sour cream, Pace and Pico De Gallo, 1/2 cup cheddar cheese and mix well.
Add cooked chicken to corn/sour cream mixture and mix well.
In a large baking pan, spray with non stick spray. Then pour crunched up Doritos on the bottom of the pan.
Add the chicken mixture on top of the Doritos, then add the cheese. Bake at 350 until cheese is melted. While it is baking dice your tomato and lettuce.
Remove from oven and top with diced tomatoes and lettuce.
