When making these Ice Cream sandwiches you want to make sure your cookies are cooled. My husband likes to have them frozen, I prefer to have them cold but you can choose how you want to have your cookies. However when you use frozen cookies the ice cream doesn’t melt too much before you get to enjoying them.

Bakery Style Cookie Ice Cream Sandwiches Ingredients
- 12 Chocolate chip cookies – you will want to use the Bakery Style Chocolate chip cookies, they are the best!
- Your favorite flavor of ice cream
- 12oz mini chocolate chips, optional
Bakery Style Cookie Ice Cream Sandwiches Directions
Start off with your chocolate chip cookies that are either frozen or room temperature taking a medium scoop get a well rounded scoop of the ice cream and place it on to the backside of one cookie.
Press the top cookie into the ice cream gently from the center so the ice cream will spread out to the edges of the cookie, be careful so you don’t break your cookie and half.
If you would like that extra chocolatey crunch you can pour your mini chocolate chips into a ball and roll the sides of your ice cream sandwich into the chocolate chips, you can use your hands to help them stick.
Enjoy these immediately or place them into the freezer to enjoy later.
