You can really use any carrots for making these savory carrots, I like to have our food look pretty so I use a combination of orange, purple and white carrots.
Do you peel carrots before roasting?
I prefer to peel (and wash) my carrots before roasting them. They have a cleaner appearance when they are done cooking, however it is not a must to peel them. If you are not peeling them it is important that you do clean them well and make sure that you get any dirt off of them before cooking them.
How long to roast carrots?
Roast carrots for 18-20 minutes at 425ºF. Roast them in the oven until they are browning and tender. Carrots need to be roasted at a high temperature so they caramelize. When you can pierce them with a fork you will know they are done cooking.
Can I Use Baby Carrots?
You can use baby carrots and make roasted baby carrots, however because they are smaller start checking to see if they are done cooking at the 15 minute mark.
How Long do Roasted Carrots last?
If stored properly roasted carrots will keep for 3-5 days after cooking them. Once they are done cooking, allow them to cool and then store in the fridge in an airtight container.

Preheat oven to 425ºF.
Wash and peel the carrots if you are peeling them.
Place the carrots on a sheet pan lined with tin foil or in a large cast-iron pan.
Drizzle the oil over all the carrots.
Sprinkle the garlic, salt, and pepper over and toss them to make sure they are well coated.
Bake for 18-20 minutes, until tender.
