Let them sit in the ice bath for about 5 minutes. Then peal the onions and trim the edges and set them aside until they are needed when making this recipe.

How to Make Pearl Onions In Cream Sauce
In a pot over medium heat melt the butter.
Once the butter is melted, add the flour and stir with a whisk constantly for two minutes.
Turn heat down to low and slowly add the milk, continuing to stir constantly with wire whisk to break up lumps.
Add the pepper and salt to taste.
Fold in the onions and mix well.
Let cook for another 3-5 minutes until the onions are fully heated thoroughly.

- 1 1/2 cups milk
- salt and pepper to taste
