Yes, there are all the amazing grilling recipes like Grilled Steak, shish kabobs, grilled chicken, grilled salmon, hot dogs, sausage and hamburgers (especially the amazing Hawaiian burger my family loves so much!) but the side dishes really make the summer meals, including this Easy Homemade Potato Salad Recipe!
As much as we love the Bacon Ranch Potato Salad this classic potato salad recipe is my go to easy potato salad recipe. Boil some potatoes, chop up a few veggies and mix them together with mayo and mustard to make a creamy potato salad. That is all that its needed for this classic potato salad recipe.

What is Potato Salad?
Potato Salad is a salad made with boiled potatoes and a mix of other ingredients and is traditionally served as a side dish.
Best Potatoes for Potato Salad
When you are making potato salad, the best potatoes to use are Yukon Gold, Russet or red potatoes. You can use whichever type you want to when you are making this easy potato salad recipe.
I most prefer using Yukon Gold potatoes when making potato salad, however all of the above mentioned will work when making potato salad.
Variations of this Recipe
Change up the veggies. When I am making potato salad I tend to just keep the base and use whatever other ingredients I have on hand that will work. There are also lots of other veggies that you can add to potato salad.
- Shredded carrots
- diced onion
- bell peppers
Change up the mustard. I used yellow mustard when making this potato salad with mustard, however spicy brown mustard or Dijon mustard can be used instead.
Ingredients for Homemade Potato Salad Recipe
- yellow mustard
- celery chopped
- cucumber chopped
Directions for Homemade potato salad
Wash the potatoes and cube. If you want to peel the potatoes you can but it is not a must.
Fill a pot with cold water and add the potatoes to the water.
Over high heat bring the potatoes to a boil and boil potatoes in a pot until they are soft enough that you can stab them with a knife easily about 15 minutes), then drain. Rinse potatoes with cold water and add to a large bowl.
While potatoes are cooking wash and chop the veggies.
Add chopped veggies, salt, pepper, mayo and mustard to the bowl and mix everything well.
Chill in the fridge for at least 30 minutes to have the flavors mix together.

- 2 cups mayonnaise can use less or more depending on how creamy you like your potato salad.

- 1 cup cucumber chopped
