I love chicken cordon blue but I do not like all the processedness (is that even a word?) of the chicken that most of them have. They are also very expensive – here a 4 pack of them is $6-7! So I decided to try a hand at making my own and it was super easy to do and they tasted better then the ones that are in the store!
Ingredients for Homemade Chicken Cordon Bleu Recipe
- 1 pound chicken breasts (3-4 chicken breasts)
- 1 thick slice of swiss cheese per chicken breast (I got the deli to cut them about 1/8th of an inch thick)
- 1 thick slice of ham (I got mine at the deli counter and asked them to slice it about 1/8th of an inch thick)
- 1 and 1/2 cups bread crumbs
- 1/2 cup mayo
- 1/2 cup spicy brown mustard
Directions for Homemade Chicken Cordon Bleu Recipe
- Heat oven to 375 – get a bowl for the bread crumbs, a bowl for mayo/mustard and a baking sheet.
- Place chicken between 2 pieces of parchment paper and beat with a rolling pin until thin and flat (this is a lot of fun if you have any pent up aggression 😉
- Take 1 piece of swiss cheese and 1 piece of ham and roll up in flattened chicken breast. If you need to use toothpicks to hold them closed.
- Mix the mayo and mustard in a bowl and then using a silicone brush cover the chicken with the mixture.
- Roll the chicken in bread crumbs and place on a baking sheet.
- Repeat for each chicken breast
- Cook in over for 35-40 minutes (Make sure chicken is no longer pink)
