Everything from Pumpkin Spice coffee, Pumpkin Spice Latte and Salted Caramel Pumpkin Spice Lattes. I make all of them mall the time in the fall. Ok, all year round I make all of them but they are my favorite to drink in the fall.
This Homemade pumpkin spice syrup I often refer to as Starbucks Copycat Pumpkin Spice Syrup seriously when added to coffee it tastes exactly like the Starbucks pumpkin spice syrup and makes for the most amazing pumpkin coffee drinks at home. This Starbucks Copycat Pumpkin Spice Syrup makes just about any coffee be the perfect Starbucks copycat, however, I do prefer to use Starbucks brand coffee when making it!
This pumpkin spice syrup is also perfect for breakfasts! We love drizzling it on top of waffles, pancakes, and in our oatmeal. This versatile homemade syrup is a must-make for this fall! Tips for Making this Recipe
Canned or homemade pumpkin puree. You can use either homemade pumpkin puree or canned pumpkin puree. If you are using canned make sure that it is pure pumpkin and not pumpkin pie filling.
Strain Syrup completely. I prefer to use a cheese cloth when I am straining the syrup, however you can also use a mesh strainer. It is important to strain all of the spices and cinnamon sticks or you will have a grainy syrup.
Allow to cool completely before putting it in the fridge. It is important that the syrup is completely cooled before being placed into the fridge.
How to Store
Allow the syrup to cool completely. Once cool store in an air tight container in the fridge. If you plan on using it a lot, I suggest making a double batch as this syrup will keep well in the fridge. After allowing the Homemade Pumpkin Spice Syrup to cool completely, it can be stored in an airtight container in the refrigerator for up to 2 months. I prefer to store it in a glass jar for easy use.

Can I use an alternative to sugar in the Homemade Pumpkin Spice Syrup?
Sugar is needed to make the syrup consistency for the Homemade Pumpkin Spice Syrup. Brown sugar would be an alternative but sugar substitutes like equal will not.
Do I need the Pumpkin puree or can I skip it in the Homemade Pumpkin Spice Syrup?
To make a syrup the main ingredients needed are equal parts water and sugar. The flavor and color of the syrup comes from all the other ingredients. If you omit the pumpkin, it will impact the pumpkin flavor. If you don’t have any puree available, you still can make a delicious syrup with the spices, I would increase the amount of spices by at least 1 1/2 times.
My cheesecloth seems not to have a very fine weave, will that still work?
Cheesecloth comes in various weaves starting with a 10 grade which is quite coarse and goes up to 90 which is a very tight weave and used for straining. You will want to use a 60, 80 or 90 grade weave to strain the Homemade Pumpkin Spice Syrup.

In a sauce pan combine the water and the sugar.
Bring to a boil over medium heat. Once boiling lower the heat to medium and let simmer until the sugar has dissolved.
Add in the pumpkin spice, cinnamon sticks and canned pumpkin and continue to simmer for 8 minutes. Be careful not to bring it to a boil, turn the heat down to low if needed.
Remove from the heat and line a large bowl with a cheese cloth. Pour the syrup thru the cheese cloth carefully to strain the syrup.
Allow the syrup to cool completely and then store in an air tight container.
