This slow cooker mexican stir fry is a fun play on a traditional stir fry. I call it stir fry because even though it is cooked in a slowcooker I serve it over rice just like I do stir fry.
It has all the great flavors you would expect from a tex-mex meal all together in one slow cooker. What I love most about this meal is, it is a really simple meal to make. If you would like your meal already for you when you get home you can make your rice ahead of time and just reheat in in the microwave.

Slow Cooker Mexican Stir Fry
Slow Cooker Mexican Stir Fry Ingredients:
- 1 lb Boneless chicken, cubed
- 1 (14.5 oz) Can black beans, rinsed & drained
- 1 (12 oz) Bag frozen corn
- 1 Onion, chopped
- 2 Cloves garlic, minced
- 1 tsp Cumin
- Salt & pepper to taste
- 2 Limes, juiced
Slow Cooker Mexican Stir Fry Directions:
- Get your slow cooker ready, spray it with nonstick spray.
- Then combine your chicken, corn, black beans, cumin, garlic, lime juice and onion to your crockpot.
- Cook on low for 8 hours or high for 4 hours.
- During the last 30 minutes of cook time cook 2 cups of rice according to cooking direction on rice package.
- Put rice on to your plate, then top with the slow cooker Mexican stir fry, and squeeze a little bit of lime juice on top if you want to add more to your meal.
