Easy Chicken Recipe!
Personally I love stuffed Chicken breasts, however they take longer to cook then I have time for some nights.
There is the time involved in stuffing them and while not overly time consuming, longer then I have available. As much I like them I don’t always have that few extra minutes it takes and so the next best thing is this amazing spinach artichoke chicken casserole!

Can I use Chicken Thighs?
An important step in this chicken casserole recipe is to cut the chicken into bite sized pieces. Cooking the chicken breasts whole we found gave us a dry chicken, no one wants dry chicken.
You can also use chicken thighs in this easy chicken casserole recipe. I prefer it with chicken breasts but I have switched out the chicken breasts for chicken thighs when that is what I had on hand.
Fresh or Frozen Spinach?
For ease of what I had on hand, I used frozen spinach (still frozen) in this spinach chicken recipe, however you can use fresh spinach instead if that is what you have on hand. Don’t cook it or anything, just toss it in like you would the frozen spinach, it will cook just fine in the oven. If you have full leaves, then I would suggest cutting it up before tossing it in the casserole.
What to Serve with this Chicken Casserole Recipe
One thing I like about this recipe is that there is meat and veggies already together. I like to serve it with a salad and then fresh bread for those in my house who do eat carbs. They love dipping the bread into the sauce that is left over on their plates after eating.

This may sound silly but I just want to double check. You cook the chicken breast first and then cut them up and mix in, right?
Stephanie says
No you add the chicken raw
katherine hunter says
Four whole chicken breasts?
Stephanie says
I used 4 whole chicken breast but you just have to look at the packages and pick on that has 3 pounds of chicken breast
Mary Hansen says
I would never add raw chicken to this. Dangerous!
Stephanie says
Yes you do raw chicken because you are cooking it in the oven.
Dana Ryan Casey says

If I want to try and make this with out mayo, would it work? Would I up the amount of the cream cheese and sour cream maybe? Or is it not a good idea at all to take the mayo out. Thank you. I’ve made this many times for myself following the ingredients to the T, but want to make it for someone who wont eat it if it has mayo (even though you cant even tell, in my opinion)
Stephanie says
Im sorry im not sure i have never tried
Katherine says
Cook first
Aimee says

I have used the roasted chicken meat that you can buy packaged at Costco for $12.99. It’s almost 3lbs. It has come out perfect and I have made this many times.
Linda says
The parmesan cheese is that fresh grated
MidgetMomma says
I have used both fresh and the one in the pantry section just depending on what i have on hand and both work well.
Amy says
Has anyone tried this in a crockpot?
Stephanie says
no but shoulds like a great idea
Cindy says
Just made this and it turned out runny. Any thoughts? I used frozen spinach. Maybe I should have thawed it and squeezed out the excess water?
Stephanie says
Yes if you use frozen you need to squeeze out any extra moister.
Jill says
I’m not big with mayo, But I will use it if I have to I know they’re sour cream in the recipe and usually that’s what people substitute mail for is there anyway to either add more sour cream or omit the mayo
Julie says
Hello! I made this and it tastes absolutely amazing. I did ring out the spinach but it came out with lots of extra liquid. Is this normal to come out this way? Thank you for the amazing recipe!
Stephanie says
I haven’t had this happen, has anyone else had this?
katherine hunter says
Four whole chicken breasts? Or halves?

This was great! I did try to make it healthier. I used Greek cream cheese, Greek yogurt instead of sour cream and light mayo. Thank you for this wonderful recipe! 🙂
