I have been playing with this turkey meat loaf recipe for awhile. The addition of the lemon zest brings out the true flavor of the ground turkey. When you cook the meat loaf in a cupcake pan it helps you from over cooking the meat and it only takes half the time to cook. This recipe isn’t only fun for April fools day but it’s great way to get your kids to eat meat loaf.
April Fools Turkey Meat Loaf Cupcakes
Turkey Meat Loaf Ingredients
- 2 tablespoons butter
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 1/4 lbs ground turkey
- 1/2 cup Italian breadcrumbs
- 1 egg
- 3/4 cup catsup
- 2 teaspoons Worcestershire sauce
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- The zest of one lemon
Mashed Potatoes
- 4 cups cubed peeled potatoes (about 2 pounds)
- 1/4 cup milk
- 1/4 cup sour cream
- 3 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish
3 tablespoons chopped scallions
Directions for April Fools Turkey Meat Loaf Cupcakes
Melt butter in a skillet over medium heat. Add the onion and garlic into the melted butter for 5 minutes, stirring occasionally until the onions become translucent. Place mixture in a large bowl to cool for 5 minutes. Combine turkey, bread crumbs, egg, 1/4 cup of the ketsup, Worcestershire sauce, salt, pepper, and lemon zest with onion mixture. Press meatloaf into a cupcake cake. Spread remaining ketsup on top of each “cupcake”. Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.
While the meatloaf is cooking you can start making the mashed potatoes. Place potato in a saucepan and cover with water. Bring them to a boil, cover and reduce heat to a simmer for 10 minutes or until tender. Drain and return potato to pan. Using a hand masher or a mixer smash the potatoes. Add milk and remaining ingredients and mix until desired consistency.
Place the turkey loaf into a cupcake liner. Put the potatoes into a pastry bag or a freezer bag with a corner cup off with a wide star tip and pipe the mashed potatoes on top of the meatloaf. To see how use the how to make a cupcake swirl tutorial
Sprinkle with scallions.
