Pecan Pie Waffles
If you are a faithful reader of Midgetmomma.com I am sure you have noticed that I love pecans. My love for pecans has been passed on to my daughter and we have spent a lot of time creating recipes that have pecans so we can enjoy them as much as possible.
My daughter loves pecans so much that she will sit with a bag of pecans and eat them like most kids eat candy. I am so not going to complain that she loves pecans and I will gladly hand her a bag for her to munch on.
Since my daughter loves pecans so much it is totally in my parenting way to come up with recipes that she will enjoy. Of course if you have been around here for any amount of time you know that when my kids tell me they love something I get to work on making recipes that are focused on the ingredient they love.

Waffles have been a long time favorite in our house. We make waffles often and the kids gobble them up every time. Many times when I ask the kids for dinner ideas they say waffles, thankfully there a lot of waffle recipes I make.
Normally I make funfetti waffles for the kids on their birthday but I knew my daughter would love Pecan Pie Waffles. They have this great difference in texture from the crunch of the pecans to the fluffy texture of the waffle. So for her birthday I surprised her with these pecan waffles and she loved them!

How to Freeze Waffles
I like the make a double or a triple batch of these homemade pecan pie waffles waffles and then freeze them.
To freeze waffles, let the waffles cool completely and then wrap each waffle individually with plastic wrap. Place wrapped waffles into a freezer bag and zip shut. Place waffles in the freezer. They will stay fresh for about 2 months in the freezer.
To cook your waffles from the freezer, just pop them in the toaster in the morning when you want to eat them.
How to Make Waffles for a Crowd
We all know that no one likes to eat cold waffles, so I use my little oven trick to keep everyone’s waffles warm so we can enjoy breakfast together. Just place the waffles on a wire rack in your oven at 200 degrees. Do NOT Stack them! This will keep them hot until everyone’s waffles are doing being made.
How to Serve Pecan Pie Waffles
After you have made the waffles, top them with more pecans, homemade whipped cream and maple syrup. You can also sprinkle a little bit of cinnamon on top of them if you love cinnamon. I am going to warm you, that when you take a bit of these amazing waffles that you might not be sure if you should be eating them for breakfast or dessert!

It would be really helpful if you said how many waffles you think this recipe makes. I got 5.5, but some didn’t rise up as nicely as I would have liked, so perhaps I should have used more for each and done 5 only.
Overall, great flavor! I didn’t add whipped cream because I don’t care for it, but made the rest according to the recipe (though I didn’t have whole milk, so I used a mixture of 1%, almond milk, and some whipping cream because that was what I had on hand). It was tough to decide if these were for breakfast or dessert!

Hi, do you think it would work if I do the batter the night before, store it in the fridge and cook the waffles the next morning?
The recipe looks delicious I’m thinking Christmas breakfast but the morning is quite busy so I would like to start ahead.
