If you are looking for an easy chocolate cookie that is soft and chewy then you are going to love these Chocolate cake cookies. These chocolate cookies are made with boxed cake mix and a few other ingredients, that make one amazing cookie!
When making these soft chocolate cake cookies you can use canned frosting or you can use homemade. I like to change things up at times when I am making these soft baked chocolate cookies and change up the flavors by using different frosting flavors.
If you are wanting to make these chocolate cookies more festive, use red cookie frosting or a white frosting died red using food coloring.
During the holidays I like to use peppermint frosting or mint buttercream frosting. But if I am making these chocolate cookies made with cake mix at other times during the year then I have used Peanutbutter Buttercream Frosting, Salted Caramel Frosting, Mint Chocolate Chip Frosting, and Peanutbutter Cookie Frosting.
They have one recipe, Chocolate Expresso Peppermint Bites that sounded amazing, but I don’t do well giving my kids things with expresso in them so we left that out and they tasted amazing! This kids wanted to eat the whole batch before I could even take the photos of the finished product (remind me not to ask them to taste something before taking the photos lol)
How to make Chocolate Cake Cookies
Chocolate Cake Cookies
- Preheat oven to 350.
- In a bowl mix cake mix, oil, eggs and expresso powder.
- Then using your hands make small 1/2 inch balls and place on a baking tray.
- Bake for 10-12 minutes and remove from oven.
- Let cookies cool a few minutes on the baking tray and then transfer to a cookie rack. Let them cool completely.
- Using the backside of a spoon put your icing on top of the cookies then sprinkles and top with the mini baking M&M's.
Once you have let your chocolate cake cookies cool you can eat them right away or you can then put them into the fun Holiday Glad containers and give them as tasty gifts!
